Kuaytiew Pad Seew
Pad Seew, which means ‘stir fried soy sauce noodles’ is an extremely popular Thai street food meal and one of the most popular noodle dish at our restaurant. It’s very quick to make and full of flavour.
Kuaytiew Pad Seew Ingredients (Serves 1)
2 Tbsp oil for frying
3 cloves garlic, peeled and minced
300 g fresh wide rice noodle (Hofun), combed through to separate ant clumps.
200 g chicken/pork/beef sliced into bite sized pieces, or seafood
1 handful of Chinese broccoli (Kailan) , cut into 5cm pieces – Alternatively you can use cabbage or spring green
¼ cup carrot
1 egg
1 Tbsp light soy sauce
½ Tbsp dark soy sauce
½ Tsp sugar
How to make Kuaytiew Pad Seew
Over a medium heat, add the oil to a wok or frying pan
Once hot, add the garlic and fry for about 10 seconds or so (it should sizzle and spit).
Add the chicken and stir fry until white in colour and cooked pretty well through.
Turn down the heat, add the noodles, Chinese broccoli, light soy sauce, dark soy sauce and sugar. Stir fry for 1-2 minutes. If the noodles start to dry, add a little more oil.
Move the noodles to one side of the pan and crack an egg into the empty side.
Crank up the heat, scramble the egg, then gently fold the noodles and egg together.
Fry for about 30 seconds more and serve.
Sprinkle a little freshly ground pepper on the top of noodles and eat whilst hot!
You can garnish with chilli flakes and vinegar to taste.
