How to... cook Chicken Sateh
A fast, old-school street food with Muslim trader origins from India and Arab countries
A fast, old-school street food, this dish can be found all over Malaysia and Indonesia. Its origins seem to point back to Java in Indonesia, where the concept of kebabs was brought by Muslim traders from India and Arab countries. Peanuts were introduced by Spanish and Portuguese explorers and they thrived in the tropical climate, which is why you see them used in so many garnishes and sauces there today.
SERVES: 4 COOKING TIME: 40 MINUTES PLUS MARINATING
PREPARATION:
1. Cut the meat into thin slices about 1 inch wide and 2 inches long.
2. Pound the coriander seeds, cumin, galangal, lemon grass, turmeric, salt and pepper into a mortar until finely ground. Pour over the meat along with the sugar and the coconut cream (or blitz all in a blender to make a paste). Mix thoroughly and set aside to marinate in the fridge for 2 hours, but preferably over night.
3. If you’re using a barbecue, get it going 1 hour before you want to cook. If you’re using a griddle pan, cut your wooden skewers to fit and preheat the pan. Tip. Soak your skewers in water for 5 minutes before skewering meat to reduce burning.
4. Skewer the meat strips length-ways and cook over a medium charcoal fire/griddle pan for bout 15 minutes, turning regularly and brushing occasionally with the remaining marinade.
4. Serve with sauce
INGREDIENTS:
- 500 grams chicken fillets or thighs
- 2 tsp. ground roasted coriander seeds
- 1/2 tsp. ground roasted cumin seeds
- 1 tsp. finely chopped galangal
- 1 heaped tbsp. finely chopped lemon grass
- 1 tsp. turmeric
- 1/4 tsp. ground paper
- 1 tsp. salt
- 2 tsp. sugar
- 1/2 cup coconut cream
- Wooden Skewers
PREPARATION:
1. Mix the peanuts and the red curry paste together well.
2. Heat the coconut cream in a wok until the oil surfaces; then add the peanut-curry paste and stir and turn to mix well. Add the remaining coconut milk and reduce the heat. Continue to stir regularly.
3. Add the tamarind juice and season to taste with sugar and salt. When the sauce has thickened spoon into a serving bowl
SATEH INGREDIENTS:
- 1/4 cup red curry paste
- 1 cup coconut cream
- 1 cup coconut milk
- 1/2 cup ground roasted peanuts (or 6 spoons of peanut butter)
- 1/4 cup tamarind juice
- Salt (to taste)
- Sugar (to taste)
How to... make Red Curry Paste
This spicy recipe will knock your socks off and can be stored in a jar in the fridge for about 3-4 months.

TIME TO MAKE (AFTER SOAKING): 10 MINUTES
PREPARATION:
1. In a wok over low heat, put the coriander seeds and cumin seeds and dry fry for about 5 minutes, then grind to a powder in a pestle and mortar.
2. Add the rest of the ingredients (except the shrimp paste) and bash to a fine paste or you can use a blender, to mix well.
3. Add the coriander seed-cumin mixture and the shrimp paste and blend again to obtain about 3/4 cup of fine textured paste.
INGREDIENTS:
- 13 small dried chillies, soaked in hot water for 15 minutes and de-seeded
- 3 tbsp. chopped shallots
- 4 tbs. chopped garlic
- 4cm piece fresh galangal or ginger, chopped
- 6 fresh kaffir lime leaves or the finely grated zest of 1 lime
- 2 tbsp. chopped lemon grass
- 1 tsp. chopped coriander root
- 20 pepper corns
- 1 tbs. shrimp paste
- 1 tbsp. coriander seeds
- 1 tbs. cumin seeds
Joy's Winter Warmers

With the Christmas silly season behind us, Spring still a very long way off and the weather an inevitable mix of cold, crisp/grey and damp, we wanted to share with you our favorite Thai winter dishes, great for long lunches out with friends or cosy evening in with loved ones.
1. Gae Yang
Grilled marinated lamb cutlets with fresh mint and Thai herbs, roasted ground rice, chillies, fish sauce and freshly squeezed lime juice. Recommended to have with a sticky rice dish!
2. Weeping Tiger Steak
Marinated fillet of sirloin beef steak, grilled over charcoal and served with a spicy dipping sauce. This dish is is great with sticky rice or our famous Pad Thai Noodles.
3. Gaeng Boombai
This Royal recipe of lamb slowly braised in our homemade red coconut curry sauce and flavoured with plenty of Thai herbs and spices. Hearty and warming this dish is great with sticky rice.

Constitution Day
This National holiday commemorates the announcement of the first permanent constitution in 1932
This national holiday in Thailand held annually on 10 December unless this is a weekend when the holiday will be observed on the following Monday. If you are visiting Thailand at this time, it is worth noting that all Government offices and banks (except those in shopping malls) will be closed.
This holiday commemorates Thailand's adoption of a constitutional monarchy in 1932. At the start of the 1930s, Thailand (then called Siam) was suffering from the effects of the great depression. The King at the time, Rama VII, was seen by many as lacking in the experience needed to run the country, so The People's Party was formed by a group of intellectuals and senior military personnel, who presented the king with the option to stay in power but have his power reduced, thus creating a constitutional monarchy. Under the new constitution, the king and monarchy remained in place with the king as head of state, head of the military and defender of all religions, much like our own Monarchy in the UK.
Since 1932, Thailand has had 18 constitutions or charters, but all have been a variation of a constitutional monarchy. This constant of the monarchy during times of great change reflects the respect and admiration that the Thai people have for their Monarchy.
Constitution Day is a day when the people of Thailand thank the monarchy for granting them the right to run their country and is celebrated by parades and fireworks.

We will be serving our Christmas & New Year's Eve menu for the whole of the festive season from December 1st to December 31st, but be sure to book to avoid disappointment as the restaurant gets very busy.

A little bit of Thailand has arrived in Bishops Stortford...
After what seems like months of planning the changes to our restaurants interior; choosing the right paint colour combinations and a rather lovely Thailand buying trip to source interesting pieces to add that 'authentic' Thai feel to our restaurant, followed by a very, very, long wait for it all to arrive by boat... we were finally able to start our renovations.
The toilets were the first to be refreshed and then we worked our way through the restaurant with a new two tone colour pallet to the walls. The bar area was updated and refreshed and we were finally able to unpack all of the treasures from Thailand, the fruits of our buying trip, proudly displaying them on the wall and placing them around the restaurant, for that authentic feel, we are pleased to finally show you the results of all our hard work.
We hope you think it was worth it and look forward to welcoming you in to see it.
Chulalongkorn Day – The King and I…
This National holiday commemorates one of Thailand’s most revered kings, King Chulalongkorn
Chulalongkorn Day is a National Holiday in Thailand held annually on 23 October unless this is a weekend when the holiday will be observed on the following Monday. If you are visiting Thailand at this time, it is worth noting that all Government offices and banks (except those in shopping malls) will be closed.
The day commemorates King Chulalongkorn (Rama V) who passed away on 23 October 1910. He was the fifth monarch of Siam from the House of Chakri and is considered one of the greatest kings of Siam (now Thailand) as he introduced many social and political reforms that helped to modernise the country, including the abolishment of slavery.
He came to the throne in 1868 when he was only 15 years old and was taught English and western customs by Anna Leonowens. Her memoirs of her time in the Siam royal court was retold in the book, 'Anna and the King of Siam' by Margaret Landon. The book was the basis for the popular Broadway & Westend musical and film, The King and I.

The 88-year-old king was widely revered but had been in poor health in recent years, making few public appearances.
He was seen as a stabilising figure in a country hit by cycles of political turmoil and multiple coups.
Crown Prince Maha Vajiralongkorn will be the new monarch, the prime minister has said.
The announcement
After two days of speculation and rumours surrounding the king's deteriorating health, the palace announcement confirming his death finally came early on Thursday evening.
"His majesty has passed away at Siriraj Hospital peacefully," a statement said, adding he had died at 15:52 (08:52 GMT).
In a televised address to the nation, Prime Minister Prayut Chan-ocha said Thailand would hold a one-year mourning period, that flags would fly half-mast and all entertainment functions must be "toned down" for a month.

It has been on our minds for a while now and we have researched colours that are modern, yet in keeping with the age of the property, and to move ourselves away from the 'old pub' feel. So, we are waving goodbye to the red, toning back the white panels to match and introducing a grey to all of the woodwork... we hope you like it - we do!
